Font settings in DreamWeaver MX 2004 (from the Preferences Fonts selection):

Hebrew
Greek
Cyrillic
Central European
Arabic
Thai
Japanese
Chinese Simplified
Korean
Chinese Traditional
Western European
Vietnamese
Turkish
Baltic
Unicode

On the same Preferences left side list, is a "New Document" list of character 
encodings (specific character sets with binary number values for each 
character). In some cases there are multiple choices available.
